Enjoy Sweet Potatoes

Sweet potatoes are versatile, tasty and highly nutritious root vegetables. They are high in beta-carotene, vitamins B1, B6, niacin, C, E, as well as calcium, iron, and potassium. The highly nutritive content is great for maintaining regular bowel health, healthy skin, and relief from asthma and arthritis as well. Adding sweet potatoes to your diet may reverse anemia and high blood pressure and they may contribute to preventing heart disease, strokes, several types of cancers and may even remove heavy metals such as mercury, lead, cadmium and copper from the body.[1]

Look for firm, smooth skinned sweet potatoes. The brighter and darker the color, the more beta carotene it contains. They can be enjoyed raw, grated into salads, pureed, or baked and cooked into pies, puddings, and soups.
